Planting density vines/hectare: 4200 Grape varieties: • 80% SANGIOVESE • 5% CANAIOLO NERO • 5% COLORINO • 5% MALVASIA DEL CHIANTI • 5% TREBBIANO
Winemaking: Hand-picked harvest. Fermentation takes place in stainless steel for about 15 days. Ageing is always done in stainless steel for twenty-four months.
Commercial release: two years after the harvest year Chemical characteristics: – alcohol: 13.5% – Total acidity: 5-5.5 – pH: 3.50
Sight: lively ruby red tending towards garnet with aging;
Smell: intense, persistent, refined, wine-like, with scents of violet and poppy, which evolve into delicate and spicy aromas with aging;
Taste: a wine with personality and excellent gustatory olfactory continuity, characterized by liveliness and sapidity that make it a structured and balanced wine. With time, it evolves into a velvety and slightly tannic wine.
Service temperature: 18 – 20 degrees Celsius. Gastronomic tips: It pairs well with many Italian dishes, from red meats to aged cheeses.
